Ingredients

  • ⅓ cup sun-dried tomatoes in oil
  • 2 cloves garlic, minced
  • 1 (16-oz) pkg gnocchi
  • ¾ cup low-sodium vegetable broth
  • ⅓ cup 2% reduced-fat milk
  • 1½ cups shredded rotisserie chicken
  • ½ (5-oz) pkg baby spinach
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Drain ½ Tbsp oil from tomato jar, and heat in a large skillet over medium-high heat. Add sun-dried tomatoes and garlic to skillet; cook 2 to 3 minutes.
  2. Add gnocchi to skillet, and cook 2 to 3 minutes until slightly toasted. Reduce heat to medium, and stir in broth and milk. Cover and cook 5 to 7 minutes until gnocchi is tender.
  3. Stir in chicken and spinach; cook 3 minutes or until spinach wilts. Sprinkle with cheese.
