Fire-Roasted Marinara Chicken

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 large eggs
  • ½ cup almond flour
  • ½ cup fire-roasted marinara sauce
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 425°F. Sprinkle both sides of chicken with salt and pepper.
  2. Whisk eggs in a shallow dish. Place flour in a second shallow dish. Dip chicken in eggs, and dredge in flour. Transfer chicken to a lightly greased baking sheet. If desired, spray chicken with coconut oil cooking spray to promote browning.
  3. Bake 25 to 30 minutes or until done.
  4. Microwave marinara sauce in a microwave-safe bowl 1 to 2 minutes, stirring once, or until thoroughly heated. Spoon sauce over chicken. Sprinkle with parsley.

  • 1 bunch Broccolini, trimmed
  • 1 Tbsp avocado oil (or use coconut oil)
  • ½ tsp minced garlic
  • ¼ tsp crushed red pepper
  • ¼ tsp salt
  • ¼ tsp black pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine all ingredients on a rimmed baking sheet. Bake 12 minutes or until Broccolini is tender, stirring once.
