Fire-Roasted Marinara Chicken
Spicy Roasted Broccolini
Ingredients
- 2 (6-oz) boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 2 large eggs
- ½ cup almond flour
- ½ cup fire-roasted marinara sauce
- 1 Tbsp chopped fresh parsley
Instructions
- Preheat oven to 425°F. Sprinkle both sides of chicken with salt and pepper.
- Whisk eggs in a shallow dish. Place flour in a second shallow dish. Dip chicken in eggs, and dredge in flour. Transfer chicken to a lightly greased baking sheet. If desired, spray chicken with coconut oil cooking spray to promote browning.
- Bake 25 to 30 minutes or until done.
- Microwave marinara sauce in a microwave-safe bowl 1 to 2 minutes, stirring once, or until thoroughly heated. Spoon sauce over chicken. Sprinkle with parsley.

- 1 bunch Broccolini, trimmed
- 1 Tbsp avocado oil (or use coconut oil)
- ½ tsp minced garlic
- ¼ tsp crushed red pepper
- ¼ tsp salt
- ¼ tsp black pepper
Side Dish Instructions
- Preheat oven to 425°F. Combine all ingredients on a rimmed baking sheet. Bake 12 minutes or until Broccolini is tender, stirring once.
