Ingredients

  • 6 (6-oz) grouper fillets
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup packed fresh basil leaves
  • ¼ cup extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 cloves garlic, cut in half

Instructions

  1. Preheat oven to 400°F. Sprinkle fish with salt and pepper on a baking sheet. Bake 12 minutes or until fish flakes with a fork.
  2. Meanwhile, process basil, oil, lemon juice, mustard, and garlic in a blender or food processor until smooth. Serve over fish.

  • 4 cups arugula 
  • ½ cup thinly sliced red onion
  • ½ cup raisins
  • ¼ cup fresh basil leaves
  • ¼ cup extra virgin olive oil
  • 2 Tbsp lemon juice
  • ¼ tsp salt
  • ¾ cup crumbled feta cheese

Side Dish Instructions

  1. Toss together first 5 ingredients.
  2. Whisk together oil, lemon juice, and salt; toss with salad. Top with cheese.
