Caramelized Pork Stir-Fry

Ingredients

  • 1½ cups low-sodium chicken broth
  • ¼ cup brown sugar
  • 1½ Tbsp fish sauce
  • 1½ Tbsp low-sodium soy sauce
  • 2 pork tenderloins, cut into 1-inch pieces (2 lb)
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 1 Tbsp minced ginger
  • 3 garlic cloves, minced
  • 1 head napa cabbage, thinly sliced
  • ⅓ cup chopped roasted, unsalted peanuts

Instructions

  1. Combine broth, brown sugar, fish sauce, and soy sauce in a bowl.
  2. Season pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes, browning on all sides. Remove from skillet.
  3. Add onion, carrot, ginger, and garlic to skillet; cook 3 minutes. Add broth mixture; bring to a boil, reduce heat, and simmer 2 to 3 minutes or until slightly thickened. Add pork and cook 1 minute tossing to coat.
  4. Serve pork mixture over cabbage. Top with peanuts.
