Caramelized Pork Stir-Fry

Ingredients
- 1½ cups low-sodium chicken broth
- ¼ cup brown sugar
- 1½ Tbsp fish sauce
- 1½ Tbsp low-sodium soy sauce
- 2 pork tenderloins, cut into 1-inch pieces (2 lb)
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 cup chopped onion
- 1 cup chopped carrot
- 1 Tbsp minced ginger
- 3 garlic cloves, minced
- 1 head napa cabbage, thinly sliced
- ⅓ cup chopped roasted, unsalted peanuts
Instructions
- Combine broth, brown sugar, fish sauce, and soy sauce in a bowl.
- Season pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes, browning on all sides. Remove from skillet.
- Add onion, carrot, ginger, and garlic to skillet; cook 3 minutes. Add broth mixture; bring to a boil, reduce heat, and simmer 2 to 3 minutes or until slightly thickened. Add pork and cook 1 minute tossing to coat.
- Serve pork mixture over cabbage. Top with peanuts.
