Crispy Oven-Fried Chicken
Creamy Dijon Kale Slaw
Ingredients
- 1½ lb chicken drumsticks
- 1½ lb chicken bone-in, skin-on thighs
- 2½ Tbsp baking powder
- 1 tsp salt, divided
- 1 tsp pepper, divided
- ⅓ cup apple cider vinegar
- 2 Tbsp honey
- ½ tsp garlic powder
- ¼ tsp cayenne pepper
- ¼ cup chopped fresh parsley
Instructions
- Preheat oven to 250°F. Toss together chicken, baking powder, and ½ tsp each salt and pepper in a large bowl. Arrange chicken on an wire rack stacked over a large rimmed baking sheet.
- Bake 30 minutes. Increase oven temperature to 425°F; Bake 40 to 50 minutes or until browned and crisp.
- Meanwhile, whisk together vinegar, honey, garlic powder, cayenne, and ½ tsp each salt and pepper in a small bowl. Brush chicken with vinegar mixture and sprinkle with parsley before serving.

- ⅓ cup mayonnaise
- 2 Tbsp water
- 2 Tbsp Dijon mustard
- 1 Tbsp chopped fresh rosemary (or used 1 tsp dried)
- 2 tsp honey
- ½ tsp pepper
- ¼ tsp salt
- 1 bunch curly leaf kale, finely chopped
- 1 (10-oz) pkg angel hair coleslaw
- ½ cup chopped red bell pepper
Side Dish Instructions
- Whisk together mayonnaise, water, mustard, rosemary, honey, pepper, and salt in a large bowl. Add kale, slaw, and bell pepper; toss.
