Tex-Mex Cauliflower Fried Rice

Ingredients
- 2 (10-oz) pkg frozen riced cauliflower
- 1½ lb boneless skinless chicken thighs, cut into 1-inch pieces
- 2 Tbsp olive oil
- 2 red bell peppers, chopped
- 1 (15-oz) can black beans, drained and rinsed
- 1 tsp chili powder
- ½ tsp salt
- ½ tsp pepper
- 4 green onions, sliced
- ½ cup crumbled cotija cheese (or use feta)
- 1 avocado, sliced
Instructions
- Cook cauliflower according to package directions; cool slightly, and squeeze dry using paper towels.
- Meanwhile, cook chicken in hot oil a large skillet over medium-high heat 10 minutes or until done, stirring occasionally. Stir in bell peppers, beans, chili powder, salt, and pepper; cook 2 to 3 minutes.
- Stir in cauliflower. Cook 5 minutes. Remove from heat. Stir in onions. Top with cheese and avocado.
