Herb Butter Fish
Sautéed Snow Peas and Carrots
Ingredients
- ⅓ cup butter, softened
- 1½ Tbsp chopped fresh tarragon (or use basil)
- 1½ Tbsp chopped fresh chives
- 1 Tbsp olive oil
- 6 (6-oz) flounder fillets (or use tilapia)
- ¾ tsp paprika
- ½ tsp kosher salt
- ¼ tsp pepper
- 1 lemon, cut into wedges
Instructions
- Combine butter, tarragon, and chives in a small bowl.
- Preheat broiler. Drizzle oil in a roasting pan. Arrange fish in pan. Coat fish lightly with cooking spray; sprinkle with paprika, salt, and pepper.
- Broil 10 minutes or until fish flakes with a fork. Serve with herb butter and lemon wedges.

- ½ cup sliced almonds
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1½ lb snow peas, trimmed
- 3 carrots, thinly sliced
- ½ cup low-sodium chicken broth
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat 2 to 3 minutes or until fragrant.
- Sauté garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute; add snow peas and carrots, stirring to coat.
- Add broth, salt, and pepper; cover and cook 5 minutes or until snow peas and carrots are tender.
- Sprinkle with nuts before serving.
