Spinach-Feta Pita Pizzas

Ingredients
- 6 pita bread rounds
- 1 (8-oz) jar pesto
- 2 Roma tomatoes, chopped
- 5 cups spinach, rinsed and chopped (or use baby spinach)
- 1 (4-oz) pkg crumbled feta cheese
- ½ cup freshly grated Parmesan cheese
- 3 Tbsp olive oil
Instructions
- Preheat oven to 350°F. Arrange pita rounds on a large baking sheet. Bake 4 to 5 minutes.
- Spread pesto on pitas. Top each with tomato, spinach, and both cheeses. Drizzle with oil.
- Bake 8 to 10 minutes or until pita edges are crisp. Sprinkle lightly with salt. Cut up pitas before serving.
