Spinach-Feta Pita Pizzas

Ingredients

  • 6 pita bread rounds
  • 1 (8-oz) jar pesto
  • 2 Roma tomatoes, chopped
  • 5 cups spinach, rinsed and chopped (or use baby spinach)
  • 1 (4-oz) pkg crumbled feta cheese
  • ½ cup freshly grated Parmesan cheese
  • 3 Tbsp olive oil

Instructions

  1. Preheat oven to 350°F. Arrange pita rounds on a large baking sheet. Bake 4 to 5 minutes.
  2. Spread pesto on pitas. Top each with tomato, spinach, and both cheeses. Drizzle with oil.
  3. Bake 8 to 10 minutes or until pita edges are crisp. Sprinkle lightly with salt. Cut up pitas before serving.
