Loaded Potato-Barbecue Chicken Casserole

Ingredients

  • 10 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • 1 (9-oz) pkg mashed potatoes
  • 1 cup barbecue sauce
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in skillet.
  2. Cut chicken into bite-size pieces; season lightly with salt and pepper. Cook chicken in hot drippings in skillet over medium heat until done.
  3. Meanwhile, prepare potatoes according to package directions. Spread potatoes in a greased 13-x 9-inch baking dish; top with chicken, barbecue sauce, cheese, and bacon.
  4. Bake 20 minutes or until thoroughly heated.

  • 1 lb green beans, trimmed
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together beans and oil on a rimmed baking sheet. Season with salt and pepper to taste.
  2. Bake 15 minutes or until tender.
