Beefy Pasta Skillet Dinner

Ingredients

  • 1½ lb ground beef
  • 2 cloves garlic, minced
  • 1 (28-oz) can crushed tomatoes
  • 2 cups chicken broth
  • 3 small zucchini, halved lengthwise and thinly sliced
  • 3 cups rotini pasta
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook beef and garlic in a large deep skillet over medium heat until beef is browned and crumbly. Drain.
  2. Stir in tomatoes, broth, zucchini, pasta, Italian seasoning, salt, and pepper. Bring to a boil over medium-high heat; cover, reduce heat, and simmer 10 minutes or until pasta is just tender. Sprinkle with cheese.

  • 6 (4-oz) cups unsweetened applesauce, chilled
