Turkey-Spinach Meatballs

Ingredients

  • 1 (20-oz) pkg lean ground turkey
  • 2 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • ¾ cup quick-cooking oats
  • 1 Tbsp Italian seasoning
  • 2 cloves garlic, minced
  • ½ tsp salt
  • 2 large eggs, lightly beaten
  • 1 (24-oz) jar marinara sauce

Instructions

  1. Preheat broiler. Combine turkey, spinach, oats, Italian seasoning, garlic, salt, and eggs. Shape into 36 meatballs.
  2. Broil on a greased foil-lined rimmed baking sheet 7 minutes, turning once.
  3. Bring marinara sauce to a boil in a Dutch oven over medium-high heat; add meatballs. Reduce heat to medium-low; cover and cook 8 minutes.
  4. Turn meatballs, and cook 7 minutes longer or until meatballs are done. Serve over whole-grain spaghetti.

Side Dish Ingredients

  • 12 oz whole-grain spaghetti, broken
  • 1 Tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • ¾ tsp salt
  • 3 pears

Side Dish Instructions

  1. Cook spaghetti according to package directions; toss with oil, cheese, and salt.
  2. Cut up pears just before serving.
