Turkey-Spinach Meatballs
Whole-Grain Spaghetti and Fresh Fruit
Ingredients
- 1 (20-oz) pkg lean ground turkey
- 2 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
- ¾ cup quick-cooking oats
- 1 Tbsp Italian seasoning
- 2 cloves garlic, minced
- ½ tsp salt
- 2 large eggs, lightly beaten
- 1 (24-oz) jar marinara sauce
Instructions
- Preheat broiler. Combine turkey, spinach, oats, Italian seasoning, garlic, salt, and eggs. Shape into 36 meatballs.
- Broil on a greased foil-lined rimmed baking sheet 7 minutes, turning once.
- Bring marinara sauce to a boil in a Dutch oven over medium-high heat; add meatballs. Reduce heat to medium-low; cover and cook 8 minutes.
- Turn meatballs, and cook 7 minutes longer or until meatballs are done. Serve over whole-grain spaghetti.
Side Dish Ingredients
- 12 oz whole-grain spaghetti, broken
- 1 Tbsp extra virgin olive oil
- ½ cup freshly grated Parmesan cheese
- ¾ tsp salt
- 3 pears
Side Dish Instructions
- Cook spaghetti according to package directions; toss with oil, cheese, and salt.
- Cut up pears just before serving.
