Ground Beef and Sweet Potato Chili
Corn Chips and Carrot Sticks
Ingredients
- 1½ lb ground beef
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 1 Tbsp olive oil
- 2 sweet potatoes, peeled and cut into chunks
- 2 (14.5-oz) cans fire-roasted diced tomatoes
- 3 Tbsp chili powder
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook beef, bell pepper and garlic in hot oil in a large nonstick skillet over medium-high heat 8 to 10 minutes or until beef is browned and crumbly.
- Transfer meat mixture to a greased 5- or 6-quart slow cooker. Stir in sweet potatoes and remaining ingredients.
- Cover and cook on LOW 6 to 7 hours. Top chili with corn chips.
Side Dish Ingredients
- 1 (9.25-oz) pkg corn chips
- 4 carrots, cut into sticks
Side Dish Instructions
- Serve corn chips as a topper for chili.
- Serve carrot sticks on each plate.
