Ground Beef and Sweet Potato Chili

Ingredients

  • 1½ lb ground beef
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 sweet potatoes, peeled and cut into chunks
  • 2 (14.5-oz) cans fire-roasted diced tomatoes
  • 3 Tbsp chili powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook beef, bell pepper and garlic in hot oil in a large nonstick skillet over medium-high heat 8 to 10 minutes or until beef is browned and crumbly.
  2. Transfer meat mixture to a greased 5- or 6-quart slow cooker. Stir in sweet potatoes and remaining ingredients.
  3. Cover and cook on LOW 6 to 7 hours. Top chili with corn chips.

Side Dish Ingredients

  • 1 (9.25-oz) pkg corn chips
  • 4 carrots, cut into sticks

Side Dish Instructions

  1. Serve corn chips as a topper for chili.
  2. Serve carrot sticks on each plate.
