Mediterranean Tuna Salad Tostadas

Ingredients

  • 3 almond flour tortillas
  • 1 (12-oz) can albacore tuna packed in water, drained
  • ½ cup chopped red bell pepper
  • 3 Tbsp olive-oil mayonnaise
  • 3 Tbsp chopped red onion
  • 2 Tbsp chopped pitted kalamata olives
  • 2 Tbsp chopped fresh parsley
  • ½ romaine lettuce heart, shredded 

Instructions

  1. Preheat oven to 350°F. Arrange tortillas in a single layer on a parchment-lined baking sheet. Lightly coat with cooking spray. Bake 6 to 8 minutes or until crisp and browned.
  2. Meanwhile, combine tuna, bell pepper, mayonnaise, onion, olives, and parsley.
  3. Top tortillas with lettuce and tuna salad.

  • 3 stalks celery
  • ½ (10-oz) container plain hummus (or your favorite flavor)

Side Dish Instructions

  1. Cut celery into 2-inch pieces; serve with hummus.
