Mediterranean Tuna Salad Tostadas
Hummus with Celery Sticks
Ingredients
- 3 almond flour tortillas
- 1 (12-oz) can albacore tuna packed in water, drained
- ½ cup chopped red bell pepper
- 3 Tbsp olive-oil mayonnaise
- 3 Tbsp chopped red onion
- 2 Tbsp chopped pitted kalamata olives
- 2 Tbsp chopped fresh parsley
- ½ romaine lettuce heart, shredded
Instructions
- Preheat oven to 350°F. Arrange tortillas in a single layer on a parchment-lined baking sheet. Lightly coat with cooking spray. Bake 6 to 8 minutes or until crisp and browned.
- Meanwhile, combine tuna, bell pepper, mayonnaise, onion, olives, and parsley.
- Top tortillas with lettuce and tuna salad.

- 3 stalks celery
- ½ (10-oz) container plain hummus (or your favorite flavor)
Side Dish Instructions
- Cut celery into 2-inch pieces; serve with hummus.
