Pesto Chicken Salad
Homestyle Tomato Soup
Ingredients
- 3 Tbsp olive-oil mayonnaise
- ½ tsp lemon zest
- 1½ Tbsp lemon juice
- 1½ tsp olive oil
- 1½ tsp pesto
- ⅛ tsp salt
- ⅛ tsp pepper
- 1½ cups chopped rotisserie chicken
- ¼ cup chopped celery
- 2 Tbsp sliced fresh basil
- 2 Tbsp pine nuts
- ½ (5-oz) pkg mixed baby greens
Instructions
- Whisk together first 7 ingredients in a large bowl. Stir in chicken, celery, basil, and nuts. Serve over mixed greens.
Side Dish Ingredients
- 1 (14.5-oz) can low-sodium chicken broth
- ½ (28-oz) can crushed tomatoes
- ½ cup milk
- 2 Tbsp chopped fresh basil
- ⅛ tsp salt
- Dash of cayenne pepper
- ¼ cup sour cream
Side Dish Instructions
- Bring broth and tomatoes to a simmer in a saucepan over medium heat.
- Stir in milk, basil, salt, and cayenne. Reduce heat to medium-low; cook until thoroughly heated.
- Top servings with sour cream.
