Chicken-Parmesan Pasta Skillet

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 Tbsp butter
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 (16-oz) pkg ziti pasta
  • 2 (24-oz) jars tomato and basil pasta sauce
  • 2 cups water
  • 1 (8-oz) pkg shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • ½ cup panko breadcrumbs
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Season chicken lightly with salt and pepper. Melt butter in a large, deep broiler-safe skillet over medium heat; add chicken, onion, and garlic. Cook until chicken is browned, stirring occasionally.
  2. Stir in pasta, pasta sauce, and water; bring to a boil, cover, reduce heat, and simmer 12 minutes or until pasta is tender. Stir in mozzarella. Sprinkle with Parmesan and breadcrumbs.
  3. Preheat broiler. Transfer skillet to oven, and broil 2 to 3 minutes or until breadcrumbs are golden. Sprinkle with parsley.

  • 2 Roma tomatoes, chopped
  • ¾ cup balsamic vinaigrette
