Microwave Sweet Corn and Peppers

Ingredients

  • 1 (16.2-oz) pkg frozen veggie crumbles (see Note)
  • 12 soft taco-size flour tortillas
  • 2 (15-oz) cans refried beans
  • 2 (8-oz) pkg shredded Mexican-blend cheese
  • 1 (8-oz) pkg shredded lettuce
  • 1 (8-oz) carton sour cream
  • 3 Roma tomatoes, diced (optional)

Instructions

  1. Cook veggie crumbles according to package directions.
  2. Arrange 6 tortillas on 2 baking sheets. Spread 1 can refried beans on tortillas. Top with crumbles, and sprinkle with 2 cups cheese. Top each with 1 tortilla. Spread 1 can beans on tortillas; sprinkle with 2 cups cheese.
  3. Bake at 400°F for 20 minutes or until tortillas are browned and crisp, Cut into pieces.
  4. Serve with lettuce, sour cream, and, if desired, tomatoes.

  • 1 (11-oz) pkg frozen honey roasted sweet corn
