Slow Cooker Chicken Parmesan

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (24-oz) jar marinara sauce
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • 1 Tbsp Italian seasoning
  • 1½ cups freshly grated Parmesan cheese
  • 2 Tbsp butter
  • 1½ cups panko breadcrumbs
  • ½ tsp garlic salt

Instructions

  1. Place chicken in a 5- to 7-quart slow cooker.
  2. Stir together marinara, tomatoes, and Italian seasoning; pour over chicken.
  3. Cover and cook on LOW 6 to 7 hours or until chicken is tender.
  4. Uncover and sprinkle with cheese; cover and cook on HIGH 30 minutes or until cheese is melted.
  5. Melt butter in a nonstick skillet over medium heat; add breadcrumbs and garlic salt, and cook 4 minutes or until golden brown, stirring often.
  6. Sprinkle breadcrumb mixture over chicken just before serving.

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp butter

Side Dish Instructions

  1. Cook broccoli according to package directions. Toss with butter in a bowl. Sprinkle lightly with salt and pepper.
