Italian Chicken Sausages with Apricot Relish

Ingredients

  • ¼ cup low-sodium chicken broth
  • 2 Tbsp low-sugar apricot preserves
  • ½ Tbsp apple cider vinegar
  • 1 (12-oz) pkg Italian sausage links with mozzarella, cut in half lengthwise
  • ½ Tbsp olive oil
  • 1 red bell pepper, cut into strips
  • ½ onion, thinly sliced

Instructions

  1. Whisk together broth, preserves, and vinegar in a small bowl.
  2. Cook sausages in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until browned.
  3. Add pepper and onion; cook 2 minutes, stirring often.
  4. Add preserves mixture. Reduce heat; cover and cook 4 minutes until thoroughly heated. Serve over Cauliflower "Grits" recipe.

Side Dish Ingredients

  • ½ (16-oz) pkg cauliflower crumbles (about 1¾ cups)
  • 1 clove garlic, minced
  • ½ Tbsp olive oil
  • 2 Tbsp low-sodium chicken broth
  • 1 Tbsp almond flour

Side Dish Instructions

  1. Cook cauliflower and garlic in hot oil in a saucepan over medium-high heat 4 minutes, stirring often.
  2. Add broth and flour. Cook 12 minutes or until liquid is evaporated, stirring often.
