Ingredients

  • 1 (8-oz) New York strip steak, trimmed 
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1½ tsp olive oil
  • 1 small shallot, finely minced
  • 1 tsp red wine vinegar
  • ¾ tsp lemon juice
  • 1 Tbsp butter
  • 2 tsp chopped fresh parsley
  • 2 tsp fresh thyme leaves

Instructions

  1. Sprinkle steak with salt and pepper. Cook in hot oil in a cast-iron or nonstick skillet over medium-high heat 4 minutes per side or to desired doneness. Remove from skillet.
  2. Cook shallot, vinegar, and lemon juice in skillet 3 to 4 minutes or until shallots are tender. Stir in butter, parsley, and thyme; cook 1 to 2 minutes or until butter is melted.
  3. Slice steak across the grain; spoon butter sauce over steaks.

  • 1 large sweet potato, cut into ¼-inch-thick pieces
  • ½ Tbsp cornstarch
  • ¼ tsp salt
  • 2 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 clove garlic, pressed

Side Dish Instructions

  1. Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
  2. Toss potato with cornstarch and salt. Drizzle potato with oil; toss to coat.
  3. Spread on prepared pan in a single layer. Bake 20 minutes; turn fries over, and bake 10 minutes or until crispy.
  4. Toss with Italian seasoning and garlic while still hot.
