Cilantro Rice and Vegetable Stir-Fry

Ingredients

  • 1 (32-oz) pkg frozen breaded chicken nuggets
  • ¾ cup no-pulp orange juice
  • 3 Tbsp soy sauce
  • 3 Tbsp sweet red chili sauce
  • 2 Tbsp rice vinegar
  • 1½ Tbsp honey
  • 1 Tbsp cornstarch
  • 1 Tbsp ginger paste

Instructions

  1. Fry or bake chicken according to package directions.
  2. Meanwhile, whisk together orange juice, soy sauce, chili sauce, vinegar, honey, and cornstarch in a bowl.
  3. Bring sauce to a boil in a large skillet over medium-high heat; reduce heat, and simmer 2 to 3 minutes or until sauce is thickened.
  4. Stir in ginger paste and chicken nuggets; toss. Serve over Cilantro Rice.

  • 2 (8.8-oz) pouches microwavable long-grain rice
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp olive oil
  • 2 (12-oz) pkg vegetable stir-fry mix
  • 2 Tbsp soy sauce

Side Dish Instructions

  1. Heat rice according to package directions; stir in cilantro and oil. Season to taste with salt and pepper.
  2. Steam stir-fry mix according to package directions; toss with soy sauce.
