Skillet Balsamic Chicken
Green Beans with Roasted Red Peppers
Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 3 Tbsp balsamic vinegar
- 3 Tbsp water
- 1 Tbsp honey
- 1 Tbsp Dijon mustard
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned.
- Whisk together vinegar, water, honey, and mustard; add to skillet. Cook 5 minutes, basting chicken with sauce, until sauce is thickened and chicken is done.

- 2 (8-oz) pkg thin green beans
- 1 (7-oz) jar roasted red bell peppers, drained and sliced
- 2 Tbsp olive oil
Side Dish Instructions
- Cook green beans in microwave according to package directions.
- Toss together green beans and peppers; drizzle with oil, and lightly season with salt and pepper.
