Skillet Balsamic Chicken

Green Beans with Roasted Red Peppers

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • 3 Tbsp water
  • 1 Tbsp honey
  • 1 Tbsp Dijon mustard

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned.
  2. Whisk together vinegar, water, honey, and mustard; add to skillet. Cook 5 minutes, basting chicken with sauce, until sauce is thickened and chicken is done.

Side Dish Ingredients

  • 2 (8-oz) pkg thin green beans
  • 1 (7-oz) jar roasted red bell peppers, drained and sliced
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Cook green beans in microwave according to package directions.
  2. Toss together green beans and peppers; drizzle with oil, and lightly season with salt and pepper.
