Ingredients

  • 2 lb sirloin steak
  • 2 Tbsp Southwest seasoning blend
  • 2 Tbsp olive oil
  • 2 (8.8-oz) pouches microwavable brown rice
  • 2 (10-oz) pkg chopped romaine lettuce
  • 2 (15-oz) cans black beans, rinsed and drained
  • 2 (15-oz) cans corn, rinsed and drained
  • 1 (16-oz) pkg pico de gallo
  • 2 avocados, thinly sliced
  • 1 cup sliced radish
  • 1 (8-oz) carton sour cream
  • ¼ cup chopped fresh cilantro
  • 2 limes, cut into wedges

Instructions

  1. Sprinkle steak with seasoning blend. Cook steak in hot oil in a large nonstick skillet over medium-high heat 5 minutes per side or to desired doneness. Let stand 5 minutes; cut into 1-inch pieces.
  2. Meanwhile, heat rice according to package directions.
  3. Divide lettuce among 6 wide-mouth bowls or plates. Top lettuce with desired amount of steak, rice, beans, corn, pico de gallo, avocados, and radishes. Dollop with sour cream, and sprinkle with cilantro. Serve with lime wedges.
