Italian Turkey Sausages with Peppers and Onions
Brussels Sprouts SaladIngredients
- 1 (19-oz) pkg sweet Italian turkey sausage links
- 2 Tbsp olive oil, divided
- 1 large onion, thinly sliced
- 2 bell peppers, thinly sliced (any colors)
- 2 cloves garlic, minced
- 1 (14.5-oz) can fire-roasted diced tomatoes
- 1 tsp Italian seasoning
Instructions
- Cook sausage in 1 Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned. Transfer to a plate; keep warm.
- Sauté onion and bell peppers in 1 Tbsp hot oil in skillet 5 to 8 minutes or until tender. Add garlic; cook 30 seconds or until fragrant. Stir in tomatoes, seasoning, and desired amounts of salt and pepper; return sausage to skillet.
- Simmer, covered, 8 to 10 minutes or until sausages are done. Halve sausages before serving.
Side Dish Ingredients
- 3 Tbsp extra virgin olive oil
- 1 Tbsp apple cider vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- 1 lb Brussels sprouts, very thinly sliced
- 2 apples, thinly sliced
- ⅓ cup sweetened dried cranberries
Side Dish Instructions
- Whisk together oil, vinegar, honey, mustard, and desired amounts of salt and pepper in a serving bowl. Add sprouts, apples, and cranberries; toss.
