Cheesy Chicken-Ziti Casserole

- ½ (16-oz) pkg ziti pasta
- 2 Tbsp butter
- ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
- ½ (8-oz) pkg whole mushrooms, sliced
- 2 cloves garlic, minced
- 1½ Tbsp all-purpose flour
- ¾ cup chicken broth
- ½ cup heavy cream
- 1 (24-oz) jar tomato basil pasta sauce
- 1 cup shredded mozzarella cheese, divided
- ½ (6-oz) pkg baby spinach
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions; drain well.
- Meanwhile, melt butter in a Dutch oven over medium-high heat. Add chicken, mushrooms, onion, and garlic; cook, stirring occasionally, until chicken is done. Sprinkle flour over chicken mixture; cook, stirring constantly, 2 minutes.
- Gradually stir in broth and cream; bring to a boil, reduce heat, and simmer until mixture is slightly thickened. Stir in pasta sauce and ¾ cup cheese. Gradually stir in spinach until wilted. Add pasta; toss.
- Spoon mixture into a lightly greased 11- x 7-inch baking dish; sprinkle with ¼ cup cheese. Bake 25 to 30 minutes or until hot and bubbly. Store leftovers in refrigerator up to 3 days.
