Avocado Burgers

Ingredients

  • 1 red bell pepper, chopped
  • ½ cup frozen whole kernel corn, thawed
  • ¼ cup chopped onion
  • ½ Tbsp olive oil
  • ¼ tsp salt
  • 2 (5.4-oz) ground beef patties
  • 2 Tbsp crushed grain-free tortilla chips with lime
  • 1 Roma tomato, chopped 
  • 1 small avocado, mashed
  • ¼ cup crumbled queso fresco (or use goat cheese)

Instructions

  1. Preheat oven to 450°F. Toss together bell pepper, corn, onion, oil, and salt on a rimmed baking sheet.
  2. Place burgers on a rack in a shallow roasting pan. Press chips into tops of burgers.
  3. Bake 20 minutes or until vegetables are beginning to brown, stirring once, and burgers are done. Stir tomato into vegetables.
  4. Spread avocado over burgers; top with cheese. Serve with salsa.
