Avocado Burgers

Ingredients
- 1 red bell pepper, chopped
- ½ cup frozen whole kernel corn, thawed
- ¼ cup chopped onion
- ½ Tbsp olive oil
- ¼ tsp salt
- 2 (5.4-oz) ground beef patties
- 2 Tbsp crushed grain-free tortilla chips with lime
- 1 Roma tomato, chopped
- 1 small avocado, mashed
- ¼ cup crumbled queso fresco (or use goat cheese)
Instructions
- Preheat oven to 450°F. Toss together bell pepper, corn, onion, oil, and salt on a rimmed baking sheet.
- Place burgers on a rack in a shallow roasting pan. Press chips into tops of burgers.
- Bake 20 minutes or until vegetables are beginning to brown, stirring once, and burgers are done. Stir tomato into vegetables.
- Spread avocado over burgers; top with cheese. Serve with salsa.
