Crispy Oven-Fried Chicken

Ingredients

  • ¾ lb chicken drumsticks
  • ¾ lb chicken bone-in, skin-on thighs
  • 1 Tbsp baking powder
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 3 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • ¼ tsp garlic powder
  • ⅛ tsp cayenne pepper
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 250°F. Toss together chicken, baking powder, and ½ tsp each salt and pepper in a large bowl. Arrange chicken on an wire rack stacked over a large rimmed baking sheet.
  2. Bake 30 minutes. Increase oven temperature to 425°F; Bake 40 to 50 minutes or until browned and crisp.
  3. Meanwhile, whisk together vinegar, honey, garlic powder, cayenne, and ½ tsp each salt and pepper in a small bowl. Brush chicken with vinegar mixture and sprinkle with parsley before serving.

  • 3 Tbsp mayonnaise
  • 1 Tbsp water
  • 1 Tbsp Dijon mustard
  • ½ Tbsp chopped fresh rosemary (or used ½ tsp dried)
  • 1 tsp honey
  • ¼ tsp pepper
  • ⅛ tsp salt
  • ½ bunch curly leaf kale, finely chopped
  • ½ (10-oz) pkg angel hair coleslaw
  • ¼ cup chopped red bell pepper

Side Dish Instructions

  1. Whisk together mayonnaise, water, mustard, rosemary, honey, pepper, and salt in a large bowl. Add kale, slaw, and bell pepper; toss.
