Sweet Potato "Toasts" with Eggs and Avocado

Ingredients
- 4 (¼-inch-thick) sweet potato slices
- 1½ Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 4 large eggs
- 4 slices center-cut bacon, cooked
- 1 avocado, pitted and sliced
Instructions
- Preheat oven to 400°F.
- Place sweet potatoes on a large baking sheet. Drizzle with ½ Tbsp oil, and sprinkle with ⅛ tsp each of salt and pepper; toss and spread in a single layer.
- Bake 30 minutes or until tender, turning after 15 minutes.
- Meanwhile, heat 1 Tbsp oil in a large nonstick skillet over medium heat.
- Crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
- Season with ⅛ tsp each salt and pepper.
- Top sweet potato "toasts" with bacon, avocado and eggs.
