Sweet Potato "Toasts" with Eggs and Avocado

Ingredients

  • 4 (¼-inch-thick) sweet potato slices
  • 1½ Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 large eggs
  • 4 slices center-cut bacon, cooked
  • 1 avocado, pitted and sliced

Instructions

  1. Preheat oven to 400°F.
  2. Place sweet potatoes on a large baking sheet. Drizzle with ½ Tbsp oil, and sprinkle with ⅛ tsp each of salt and pepper; toss and spread in a single layer.
  3. Bake 30 minutes or until tender, turning after 15 minutes.
  4. Meanwhile, heat 1 Tbsp oil in a large nonstick skillet over medium heat.
  5. Crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
  6. Season with ⅛ tsp each salt and pepper.
  7. Top sweet potato "toasts" with bacon, avocado and eggs.
