Grilled Dry-Rub Chicken Thighs
Cheddar "Grits" and Roasted Asparagus
Ingredients
- 2 Tbsp smoked paprika
- 1 Tbsp onion powder
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp pepper
- 1 tsp kosher salt
- 2 lb bone-in chicken thighs
- 3 Tbsp olive oil
Instructions
- Combine paprika, onion powder, garlic powder, oregano, cumin, pepper, and salt in a small bowl. Rub mixture all over chicken thighs. Let stand 20 minutes at room temperature.
- Preheat grill to medium heat. Place chicken on a grill rack rubbed with olive oil. Grill, covered, 30 to 35 minutes or until done, turning occasionally.
Side Dish Ingredients
- 1 lb asparagus, trimmed
- 3 Tbsp olive oil
- 1 tsp kosher salt, divided
- ½ tsp garlic powder
- 2 (12-oz) pkg frozen riced cauliflower
- ½ cup shredded Cheddar cheese
Side Dish Instructions
- Preheat oven to 425°F. Toss together asparagus, oil, ½ tsp salt, and garlic powder. Arrange on a rimmed baking sheet.
- Bake 8 minutes or until asparagus is tender.
- Cook cauliflower according to package directions. Stir in cheese and ½ tsp salt.
