Grilled Dry-Rub Chicken Thighs

Ingredients

  • 2 Tbsp smoked paprika
  • 1 Tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp pepper
  • 1 tsp kosher salt
  • 2 lb bone-in chicken thighs
  • 3 Tbsp olive oil

Instructions

  1. Combine paprika, onion powder, garlic powder, oregano, cumin, pepper, and salt in a small bowl. Rub mixture all over chicken thighs. Let stand 20 minutes at room temperature.
  2. Preheat grill to medium heat. Place chicken on a grill rack rubbed with olive oil. Grill, covered, 30 to 35 minutes or until done, turning occasionally.

Side Dish Ingredients

  • 1 lb asparagus, trimmed
  • 3 Tbsp olive oil
  • 1 tsp kosher salt, divided
  • ½ tsp garlic powder
  • 2 (12-oz) pkg frozen riced cauliflower
  • ½ cup shredded Cheddar cheese

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together asparagus, oil, ½ tsp salt, and garlic powder. Arrange on a rimmed baking sheet.
  2. Bake 8 minutes or until asparagus is tender.
  3. Cook cauliflower according to package directions. Stir in cheese and ½ tsp salt.
