Instant Pot Ginger Beef
Sesame Zucchini Noodles
Ingredients
- 2 lb boneless chuck roast, well trimmed and cut into 4 pieces
- 1 tsp salt
- ½ tsp pepper
- 2 Tbsp canola oil
- 1 cup low-sodium beef broth
- 4 cloves garlic, minced
- 1 (3-inch) piece ginger, peeled and thinly sliced
- 1 onion, chopped
Instructions
- Sprinkle beef with salt and pepper. Heat oil in a 6-quart Instant Pot on Sauté setting. Cook beef 2 to 3 minutes per side or until browned. Add broth, garlic, ginger, and onion.
- Close and lock pot lid. Turn steam release to Sealing position. Set cook time on Manual for 20 minutes or until beef is very tender.
- When timer sounds, turn pot off, and release steam using Quick Release method. Carefully remove beef; shred with 2 forks. Return to pot.
- Serve beef mixture over Sesame Zucchini Noodles recipe.
Side Dish Ingredients
- 2 cloves garlic, minced
- 3 Tbsp sesame oil
- 1 (16-oz) pkg zucchini noodles
- 1 (8-oz) pkg snow peas, halved diagonally
- 2 green onions, thinly sliced
- ½ tsp salt
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium-high heat 1 minute. Add zucchini noodles and snow peas. Cook, stirring often, 4 minutes or until tender .
- Add onions, and sprinkle with salt.
