Ingredients
- 4 (5-oz) cans chunk albacore tuna in water, drained
- 2 large eggs
- 2 tsp lemon zest
- 2 Tbsp lemon juice
- 6 Tbsp almond flour
- 6 Tbsp mayonnaise
- 4 green onions, chopped
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
Instructions
- Combine tuna, eggs, lemon zest, lemon juice, almond flour, mayonnaise, onions, salt, and pepper in a bowl. Shape into 12 (3-inch) patties.
- Heat 1½ Tbsp oil in a large skillet over medium heat. Add six patties, and cook 4 to 5 minutes per side. Remove from skillet, and repeat procedure with remaining oil and patties.

- 1 lb green beans, trimmed
- ½ cup water
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- ½ tsp kosher salt
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Heat beans in water in a large skillet over medium heat. Cover and steam 4 minutes or until water has evaporated.
- Add oil. Stir-fry 5 to 6 minutes. Stir in vinegar. Sprinkle with salt and cheese.
