Ingredients

  • 4 (5-oz) cans chunk albacore tuna in water, drained
  • 2 large eggs
  • 2 tsp lemon zest
  • 2 Tbsp lemon juice
  • 6 Tbsp almond flour
  • 6 Tbsp mayonnaise
  • 4 green onions, chopped
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil

Instructions

  1. Combine tuna, eggs, lemon zest, lemon juice, almond flour, mayonnaise, onions, salt, and pepper in a bowl. Shape into 12 (3-inch) patties.
  2. Heat 1½ Tbsp oil in a large skillet over medium heat. Add six patties, and cook 4 to 5 minutes per side. Remove from skillet, and repeat procedure with remaining oil and patties.

  • 1 lb green beans, trimmed
  • ½ cup water
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • ½ tsp kosher salt
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Heat beans in water in a large skillet over medium heat. Cover and steam 4 minutes or until water has evaporated.
  2. Add oil. Stir-fry 5 to 6 minutes. Stir in vinegar. Sprinkle with salt and cheese.
