Blackened Ribeye Salad

Ingredients

  • 2 (¾-lb) ribeye steaks
  • 4 Tbsp extra virgin olive oil, divided
  • 2 tsp blackened seasoning
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 (5-oz) pkg spring mix
  • 1 cup grape tomatoes, halved
  • ⅓ cup crumbled feta cheese
  • 2 Tbsp balsamic vinegar
  • 1 tsp Dijon mustard

Instructions

  1. Preheat grill to medium-high heat. Rub steaks with 1 Tbsp oil; sprinkle with blackened seasoning and ¼ tsp each salt and pepper.
  2. Grill steaks, covered, 6 minutes per side or to desired doneness. Let stand 5 minutes before slicing thinly across the grain.
  3. Combine salad greens, tomatoes, and feta in a large bowl. Whisk together 3 Tbsp oil, vinegar, mustard, and ¼ tsp each salt and pepper. Pour over greens; toss. Top with sliced steak.
