Blackened Ribeye Salad

Ingredients
- 2 (¾-lb) ribeye steaks
- 4 Tbsp extra virgin olive oil, divided
- 2 tsp blackened seasoning
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 (5-oz) pkg spring mix
- 1 cup grape tomatoes, halved
- ⅓ cup crumbled feta cheese
- 2 Tbsp balsamic vinegar
- 1 tsp Dijon mustard
Instructions
- Preheat grill to medium-high heat. Rub steaks with 1 Tbsp oil; sprinkle with blackened seasoning and ¼ tsp each salt and pepper.
- Grill steaks, covered, 6 minutes per side or to desired doneness. Let stand 5 minutes before slicing thinly across the grain.
- Combine salad greens, tomatoes, and feta in a large bowl. Whisk together 3 Tbsp oil, vinegar, mustard, and ¼ tsp each salt and pepper. Pour over greens; toss. Top with sliced steak.
