Italian Smothered Chicken
Quick-Roasted BroccoliniIngredients
- 1½ lb boneless, skinless chicken breasts
- 1 cup Italian dressing
- ½ tsp garlic salt
- 2 Tbsp olive oil
- 1 cup no-sugar-added pasta sauce
- 1 (8-oz) pkg shredded Italian-blend cheese
Instructions
- Place chicken in a large zip-top plastic bag; add dressing. Seal bag, and marinate in refrigerator for at least 1 hour or up to overnight.
- Remove chicken from marinade, discarding marinade; sprinkle chicken with garlic salt.
- Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with pasta sauce, and cook 8 to 10 minutes or until done, turning once.
- Top chicken with cheese; cover and cook 1 minute or until cheese is melted.

- 1 lb Broccolini
- 3 Tbsp olive oil
- 1 tsp garlic powder
- ½ tsp kosher salt
Side Dish Instructions
- Preheat oven to 450°F. Toss together Broccolini, oil, garlic powder, and salt.
- Arrange Broccolini in a single layer on a rimmed baking sheet.
- Bake 6 minutes or until tender, stirring once.
