Pork Chops in Baked Bean Sauce
Potato Salad with Bacon
Ingredients
- 2 lb boneless pork chops
- ⅓ cup chopped onion
- ½ tsp salt
- ¼ tsp garlic salt
- ⅛ tsp pepper
- 1 (28-oz) can baked beans
- 2 Tbsp brown sugar
- 1 (20-oz) can crushed pineapple, undrained
- ⅓ cup chili sauce
Instructions
- Place pork chops in a greased 5- or 6-quart slow cooker. Cover with onion. Sprinkle with salt, garlic salt, and pepper.
- Combine baked beans and brown sugar; pour over chops. Combine pineapple and chili sauce; spread over beans.
- Cover and cook on LOW 7 to 8 hours.
Side Dish Ingredients
- 1½ lb small red potatoes
- 4 slices bacon
- 3 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 2 tsp Dijon mustard
- ¾ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Bring potatoes and salted water to cover to a boil in a Dutch oven; cook 15 minutes or until tender. Drain.
- Rinse potatoes under cold water to cool; cut into bite-size pieces.
- Cook bacon in a nonstick skillet over medium heat until crisp; drain and crumble.
- Whisk together oil, vinegar, mustard, salt and pepper. Toss dressing with potatoes and bacon.
