Pork Chops in Baked Bean Sauce

Ingredients

  • 2 lb boneless pork chops
  • ⅓ cup chopped onion
  • ½ tsp salt
  • ¼ tsp garlic salt
  • ⅛ tsp pepper
  • 1 (28-oz) can baked beans
  • 2 Tbsp brown sugar
  • 1 (20-oz) can crushed pineapple, undrained
  • ⅓ cup chili sauce

Instructions

  1. Place pork chops in a greased 5- or 6-quart slow cooker. Cover with onion. Sprinkle with salt, garlic salt, and pepper.
  2. Combine baked beans and brown sugar; pour over chops. Combine pineapple and chili sauce; spread over beans.
  3. Cover and cook on LOW 7 to 8 hours.

Side Dish Ingredients

  • 1½ lb small red potatoes
  • 4 slices bacon
  • 3 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 2 tsp Dijon mustard
  • ¾ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Bring potatoes and salted water to cover to a boil in a Dutch oven; cook 15 minutes or until tender. Drain.
  2. Rinse potatoes under cold water to cool; cut into bite-size pieces.
  3. Cook bacon in a nonstick skillet over medium heat until crisp; drain and crumble.
  4. Whisk together oil, vinegar, mustard, salt and pepper. Toss dressing with potatoes and bacon.
