French Fried Onion Chicken

Ingredients

  • ½ cup butter, melted
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (6-oz) can French fried onions, crushed
  • 1½ lb chicken tenderloins
  • Ketchup

Instructions

  1. Preheat oven to 400°F; spray a 13-x 9-inch baking dish with cooking spray.
  2. Combine melted butter, Worcestershire, Dijon, salt, and pepper in a shallow dish. Place crushed onions in a separate dish.
  3. Dip chicken in butter mixture; dredge in onions to coat. Place in prepared dish. Drizzle remaining butter mixture over chicken; sprinkle with remaining onions.
  4. Bake 15 to 20 minutes or until chicken is done. Serve with ketchup.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen cauliflower rice
  • 2 Tbsp butter, cut up
  • 1½ cups shredded white Cheddar cheese

Side Dish Instructions

  1. Cook cauliflower rice in microwave according to package directions; cool slightly, and stir in butter and cheese. Season with salt and pepper to taste.
