Linguine with Clam Sauce
Bibb Lettuce Salad
Ingredients
- 3 (6.5-oz) cans chopped clams
- 12 oz whole-grain linguine
- 4 cloves garlic, minced
- ⅛ tsp crushed red pepper
- 2 Tbsp olive oil
- 1 cup white wine (or use low-sodium chicken broth)
- 3 Tbsp chopped fresh flat-leaf parsley
- 6 Tbsp freshly grated Parmesan cheese
Instructions
- Drain clams, reserving 1 cup juice. Cook pasta according to package directions.
- Meanwhile, sauté garlic and red pepper in hot oil in a large skillet over medium heat 1 minute or until fragrant.
- Stir in wine and reserved clam juice. Cook 5 minutes or until reduced to 1½ cups. Add pasta, clams, and parsley; toss. Divide pasta mixture among 6 serving plates; sprinkle each serving evenly with cheese.

- 1 (6-oz) pkg butter lettuce
- ½ cup chopped onion
- 2 Tbsp extra virgin olive oil
- 2 Tbsp apple cider vinegar
- ½ tsp salt
Side Dish Instructions
- Toss together all ingredients in a serving bowl.
