Linguine with Clam Sauce

Ingredients

  • 3 (6.5-oz) cans chopped clams
  • 12 oz whole-grain linguine
  • 4 cloves garlic, minced
  • ⅛ tsp crushed red pepper
  • 2 Tbsp olive oil
  • 1 cup white wine (or use low-sodium chicken broth)
  • 3 Tbsp chopped fresh flat-leaf parsley
  • 6 Tbsp freshly grated Parmesan cheese

Instructions

  1. Drain clams, reserving 1 cup juice. Cook pasta according to package directions.
  2. Meanwhile, sauté garlic and red pepper in hot oil in a large skillet over medium heat 1 minute or until fragrant.
  3. Stir in wine and reserved clam juice. Cook 5 minutes or until reduced to 1½ cups. Add pasta, clams, and parsley; toss. Divide pasta mixture among 6 serving plates; sprinkle each serving evenly with cheese.

  • 1 (6-oz) pkg butter lettuce
  • ½ cup chopped onion
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp apple cider vinegar
  • ½ tsp salt

Side Dish Instructions

  1. Toss together all ingredients in a serving bowl.
