South of the Border Meat Loaf
Roasted Sweet Potato WedgesIngredients
- 1 (20-oz) pkg 93% lean ground turkey
- 1½ cups chopped red onion
- 1½ cups chopped red bell pepper
- 1 cup panko breadcrumbs
- ¾ cup picante sauce, divided
- ½ cup egg substitute
- 1½ tsp ground cumin
- 3 Tbsp ketchup
Instructions
- Preheat oven to 350°F. Combine turkey, onion, bell pepper, breadcrumbs, ½ cup picante sauce, egg substitute, and cumin in a bowl; mix well with hands.
- Transfer to a baking sheet coated with cooking spray; shape into an oval, about 1½ inches thick.
- Bake 55 minutes or until a meat thermometer inserted in center of loaf reads 165°F.
- Stir together remaining picante sauce and ketchup; brush over loaf.
- Bake 5 minutes longer. Let stand 10 minutes before slicing.
Side Dish Ingredients
- 2¼ lb sweet potatoes
- 3 Tbsp olive oil
- 1 Tbsp smoked paprika
- 1½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 350°F. Peel and cut potatoes into wedges.
- Toss potato wedges with oil on a large baking sheet; sprinkle with paprika, garlic powder, salt, and pepper.
- Bake 35 to 45 minutes or until browned and crisp, stirring halfway through cooking.
