South of the Border Meat Loaf

Roasted Sweet Potato Wedges

Ingredients

  • 1 (20-oz) pkg 93% lean ground turkey
  • 1½ cups chopped red onion
  • 1½ cups chopped red bell pepper
  • 1 cup panko breadcrumbs
  • ¾ cup picante sauce, divided
  • ½ cup egg substitute
  • 1½ tsp ground cumin
  • 3 Tbsp ketchup

Instructions

  1. Preheat oven to 350°F. Combine turkey, onion, bell pepper, breadcrumbs, ½ cup picante sauce, egg substitute, and cumin in a bowl; mix well with hands.
  2. Transfer to a baking sheet coated with cooking spray; shape into an oval, about 1½ inches thick.
  3. Bake 55 minutes or until a meat thermometer inserted in center of loaf reads 165°F.
  4. Stir together remaining picante sauce and ketchup; brush over loaf.
  5. Bake 5 minutes longer. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 2¼ lb sweet potatoes
  • 3 Tbsp olive oil
  • 1 Tbsp smoked paprika
  • 1½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 350°F. Peel and cut potatoes into wedges.
  2. Toss potato wedges with oil on a large baking sheet; sprinkle with paprika, garlic powder, salt, and pepper.
  3. Bake 35 to 45 minutes or until browned and crisp, stirring halfway through cooking.
