Chicken Chow Mein

Ingredients
- 2 (12-oz) pkg frozen zucchini spirals
- ¼ cup low-sodium soy sauce
- 2 Tbsp fish sauce
- 1 Tbsp honey
- 2 tsp dark sesame oil
- 1½ lb boneless, skinless chicken thighs, cut into ½-inch strips
- 3 Tbsp canola oil, divided
- 2 cups shredded carrots
- 4 stalks celery, thinly sliced
- 1 (10-oz) pkg angel hair coleslaw
- 6 green onions, chopped
- 1 Tbsp minced fresh ginger (or use ¼ tsp ground ginger)
- 3 cloves garlic, crushed
- Crushed red pepper (optional)
Instructions
- Microwave zucchini according to package directions. Cool slightly; drain, and squeeze out excess moisture using a kitchen towel or paper towels.
- Meanwhile, whisk together soy sauce, fish sauce, honey, and sesame oil in a small bowl.
- Sauté chicken, in batches if necessary, in 2 Tbsp hot canola oil in a large nonstick skillet over medium-high heat 6 minutes. Transfer chicken to a plate; keep warm.
- Cook carrots and celery in 1 Tbsp hot canola oil in skillet over medium-high heat 3 minutes. Add slaw, onions, ginger, and garlic; cook 2 to 3 minutes or until vegetables are crisp-tender.
- Add zucchini, chicken, and soy sauce mixture to skillet. Cook 2 minutes or until thoroughly heated. Sprinkle with red pepper, if desired.
