Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- 1 cup quartered artichoke hearts
- ½ cup pitted kalamata olives, halved
- ½ cup sun-dried tomatoes in oil, thinly sliced
- ⅓ cup pesto
- ¼ cup capers
- 3 Tbsp chopped fresh dill, divided
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done.
- Meanwhile, cook artichokes, olives, tomatoes, pesto, capers, and 2 Tbsp dill in a large skillet over medium-high heat 3 to 4 minutes or until thoroughly heated. Serve artichoke mixture over chicken. Sprinkle with 1 Tbsp dill.
