Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • 1 cup quartered artichoke hearts
  • ½ cup pitted kalamata olives, halved
  • ½ cup sun-dried tomatoes in oil, thinly sliced
  • ⅓ cup pesto
  • ¼ cup capers
  • 3 Tbsp chopped fresh dill, divided

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done.
  2. Meanwhile, cook artichokes, olives, tomatoes, pesto, capers, and 2 Tbsp dill in a large skillet over medium-high heat 3 to 4 minutes or until thoroughly heated. Serve artichoke mixture over chicken. Sprinkle with 1 Tbsp dill.
