Ingredients
- 1 (16-oz) pkg cubed sweet potatoes
- ½ red onion, cut into wedges
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp olive oil, divided
- ½ Tbsp whole-grain mustard
- ½ Tbsp honey
- ½ Tbsp apple cider vinegar
- 2 chicken and apple smoked sausage links
- 1 small bunch lacinato kale, stemmed and coarsely chopped
Instructions
- Preheat oven to 450°F. Toss potatoes and onion with salt, pepper, and ½ Tbsp oil on a lightly greased rimmed baking sheet.
- Bake 10 minutes or until potatoes are just tender; nestle sausage around potatoes and onion.
- Bake 10 minutes longer or until sausages begin to brown.
- Meanwhile, whisk together 1½ Tbsp oil, mustard, honey, and vinegar; massage 1 Tbsp vinaigrette into kale.
- Remove sheet pan from oven; add kale and bake 3 minutes longer or until kale becomes charred in places.
- Drizzle sheet pan with remaining vinaigrette, and serve.
