Ingredients

  • 1 (16-oz) pkg cubed sweet potatoes
  • ½ red onion, cut into wedges
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp olive oil, divided
  • ½ Tbsp whole-grain mustard
  • ½ Tbsp honey
  • ½ Tbsp apple cider vinegar
  • 2 chicken and apple smoked sausage links
  • 1 small bunch lacinato kale, stemmed and coarsely chopped 

Instructions

  1. Preheat oven to 450°F. Toss potatoes and onion with salt, pepper, and ½ Tbsp oil on a lightly greased rimmed baking sheet.
  2. Bake 10 minutes or until potatoes are just tender; nestle sausage around potatoes and onion.
  3. Bake 10 minutes longer or until sausages begin to brown.
  4. Meanwhile, whisk together 1½ Tbsp oil, mustard, honey, and vinegar; massage 1 Tbsp vinaigrette into kale.
  5. Remove sheet pan from oven; add kale and bake 3 minutes longer or until kale becomes charred in places.
  6. Drizzle sheet pan with remaining vinaigrette, and serve.
