Broiled Salmon with Creamy Tarragon Cucumbers
Browned Butter New Potatoes
Ingredients
- 2 (6-oz) salmon fillets
- 2 tsp olive oil
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 lemon
- 3 Tbsp plain Greek yogurt
- 1 Tbsp olive-oil mayonnaise
- ½ tsp dried tarragon
- 1 small English cucumber, chopped
- 2 Tbsp chopped red onion
Instructions
- Preheat broiler. Arrange fillets on a rimmed baking sheet lined with parchment paper. Drizzle with oil, and sprinkle with ⅛ tsp each salt and pepper.
- Broil fillets 7 to 9 minutes or until fish flakes with a fork.
- Meanwhile, grate zest and squeeze juice from lemon to yield 1½ tsp zest and 4 tsp juice. Mix together lemon zest, lemon juice, yogurt, mayonnaise, tarragon, and ⅛ tsp each salt and pepper in a bowl. Fold in cucumber and onion. Serve cucumber mixture over fish.

- ½ lb new potatoes, halved or quartered
- 1½ Tbsp water
- 1 Tbsp butter
- 1 Tbsp finely chopped fresh parsley
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Microwave potatoes and water, uncovered, in a microwave-safe bowl at HIGH 5 to 7 minutes, stirring every 2 minutes, or until potatoes are tender; drain.
- Meanwhile, melt butter in a skillet over medium heat; cook, stirring occasionally, 3 to 5 minutes or until browned and fragrant. Remove from heat.
- Toss together potatoes, butter, parsley, salt, and pepper in a bowl.
