Broiled Salmon with Creamy Tarragon Cucumbers

Ingredients

  • 2 (6-oz) salmon fillets
  • 2 tsp olive oil
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 lemon
  • 3 Tbsp plain Greek yogurt
  • 1 Tbsp olive-oil mayonnaise
  • ½ tsp dried tarragon
  • 1 small English cucumber, chopped
  • 2 Tbsp chopped red onion

Instructions

  1. Preheat broiler. Arrange fillets on a rimmed baking sheet lined with parchment paper. Drizzle with oil, and sprinkle with ⅛ tsp each salt and pepper.
  2. Broil fillets 7 to 9 minutes or until fish flakes with a fork.
  3. Meanwhile, grate zest and squeeze juice from lemon to yield 1½ tsp zest and 4 tsp juice. Mix together lemon zest, lemon juice, yogurt, mayonnaise, tarragon, and ⅛ tsp each salt and pepper in a bowl. Fold in cucumber and onion. Serve cucumber mixture over fish.

  • 1 Tbsp butter
  • 1 Tbsp finely chopped fresh parsley
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Microwave potatoes and water, uncovered, in a microwave-safe bowl at HIGH 5 to 7 minutes, stirring every 2 minutes, or until potatoes are tender; drain.
  2. Meanwhile, melt butter in a skillet over medium heat; cook, stirring occasionally, 3 to 5 minutes or until browned and fragrant. Remove from heat.
  3. Toss together potatoes, butter, parsley, salt, and pepper in a bowl.
