Onion-Smothered Pork Chops

Lima Beans with Mustard-Yogurt Sauce and Tomatoes

Ingredients

  • 1 tsp canola oil
  • 2 (4-oz) boneless pork loin chops
  • 1 tsp salt-free steak grilling blend seasoning
  • ⅛ tsp salt
  • 1 cup thinly sliced red onion
  • 2 Tbsp water

Instructions

  1. Heat oil in a nonstick skillet over medium-high heat.
  2. Sprinkle both sides of pork chops with seasoning and salt.
  3. Add pork chops to skillet; cook 3 to 4 minutes per side or until slightly pink in center. Remove pork chops from skillet; cover and keep warm.
  4. Add onions to skillet; sauté 4 to 5 minutes or until onions begin to brown on edges.
  5. Stir in water, and cook 15 seconds or until water is slightly evaporated, stirring constantly to loosen browned pits from pan.
  6. Return pork chops to skillet; cook 1 to 2 minutes or until thoroughly heated.
  7. Divide pork between 2 plates; top with onion mixture.

Side Dish Ingredients

  • 1½ cups frozen lima beans
  • 2 Tbsp reduced-fat mayonnaise
  • 1 Tbsp fat-free plain Greek yogurt
  • ½ tsp Dijon mustard
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 4 Roma tomatoes, quartered lengthwise
  • 2 tsp balsamic vinegar

Side Dish Instructions

  1. Cook lima beans according to package directions.
  2. Whisk together mayonnaise, yogurt, mustard, and ⅛ tsp each salt and pepper. Drain beans, and toss with mayonnaise mixture.
  3. Toss tomatoes with vinegar and ⅛ tsp each salt and pepper in a bowl.
