Onion-Smothered Pork Chops
Lima Beans with Mustard-Yogurt Sauce and Tomatoes
Ingredients
- 1 tsp canola oil
- 2 (4-oz) boneless pork loin chops
- 1 tsp salt-free steak grilling blend seasoning
- ⅛ tsp salt
- 1 cup thinly sliced red onion
- 2 Tbsp water
Instructions
- Heat oil in a nonstick skillet over medium-high heat.
- Sprinkle both sides of pork chops with seasoning and salt.
- Add pork chops to skillet; cook 3 to 4 minutes per side or until slightly pink in center. Remove pork chops from skillet; cover and keep warm.
- Add onions to skillet; sauté 4 to 5 minutes or until onions begin to brown on edges.
- Stir in water, and cook 15 seconds or until water is slightly evaporated, stirring constantly to loosen browned pits from pan.
- Return pork chops to skillet; cook 1 to 2 minutes or until thoroughly heated.
- Divide pork between 2 plates; top with onion mixture.
Side Dish Ingredients
- 1½ cups frozen lima beans
- 2 Tbsp reduced-fat mayonnaise
- 1 Tbsp fat-free plain Greek yogurt
- ½ tsp Dijon mustard
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 4 Roma tomatoes, quartered lengthwise
- 2 tsp balsamic vinegar
Side Dish Instructions
- Cook lima beans according to package directions.
- Whisk together mayonnaise, yogurt, mustard, and ⅛ tsp each salt and pepper. Drain beans, and toss with mayonnaise mixture.
- Toss tomatoes with vinegar and ⅛ tsp each salt and pepper in a bowl.
