Chicken and Refried Bean Tostadas
Spicy Mango Toss and Chips
Ingredients
- 1½ lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp ground cumin
- ¼ tsp chili powder
- 6 almond flour tortillas
- 1 (16-oz) can lightly salted, organic refried black beans
- 2 romaine lettuce hearts, shredded
- 2 avocados, diced
- 1 cup refrigerated fresh salsa
- ½ cup thinly sliced red onion
- ¼ cup chopped fresh cilantro (or use flat-leaf parsley)
Instructions
- Preheat oven to 375°F. Sprinkle chicken with salt, pepper, cumin, and chili powder in a lightly greased baking dish.
- Bake 25 minutes or until chicken is done. Cool slightly, and shred.
- Coat tortillas with cooking spray on a baking sheet. Toast in oven 2 to 3 minutes. Spread refried beans over warm tortillas. Top with lettuce, chicken, avocado, salsa, onion, and cilantro.

- 3 mangoes, seeded and cut into matchstick pieces
- 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
- ¼ cup fresh lime juice
- ¼ tsp cayenne pepper
- 1 (5-oz) pkg grain-free tortilla chips
Side Dish Instructions
- Combine mangoes, cilantro, lime juice, and cayenne pepper in a medium bowl; chill until ready to serve. Serve with chips.
