Chicken and Refried Bean Tostadas

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp ground cumin
  • ¼ tsp chili powder
  • 6 almond flour tortillas
  • 1 (16-oz) can lightly salted, organic refried black beans
  • 2 romaine lettuce hearts, shredded
  • 2 avocados, diced
  • 1 cup refrigerated fresh salsa
  • ½ cup thinly sliced red onion
  • ¼ cup chopped fresh cilantro (or use flat-leaf parsley)

Instructions

  1. Preheat oven to 375°F. Sprinkle chicken with salt, pepper, cumin, and chili powder in a lightly greased baking dish.
  2. Bake 25 minutes or until chicken is done. Cool slightly, and shred.
  3. Coat tortillas with cooking spray on a baking sheet. Toast in oven 2 to 3 minutes. Spread refried beans over warm tortillas. Top with lettuce, chicken, avocado, salsa, onion, and cilantro.

  • 3 mangoes, seeded and cut into matchstick pieces
  • 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
  • ¼ cup fresh lime juice
  • ¼ tsp cayenne pepper
  • 1 (5-oz) pkg grain-free tortilla chips

Side Dish Instructions

  1. Combine mangoes, cilantro, lime juice, and cayenne pepper in a medium bowl; chill until ready to serve. Serve with chips.
