Turkey Burger Salad

Ingredients
- 2 lb ground turkey
- 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
- ½ cup almond flour
- ¼ cup minced red onion
- 5 Tbsp chopped fresh mint, divided
- 2 tsp Greek seasoning
- 1 tsp lemon zest
- 1 large egg, lightly beaten
- 1 English cucumber, sliced
- 3 Roma tomatoes, sliced
- ½ cup sliced red onion
- 2 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- 1 (10-oz) pkg spinach
Instructions
- Stir together turkey, chopped spinach, flour, ¼ cup minced onion, 2 Tbsp mint, Greek seasoning, lemon zest, and egg in a large bowl. Shape into 6 patties.
- Preheat grill or grill pan to medium-high heat. Grill patties, covered, 7 to 8 minutes per side or until no longer pink.
- Meanwhile, stir together cucumber, tomatoes, ½ cup sliced onion, 3 Tbsp mint, lemon juice, and oil.
- Divide fresh spinach among plates; top with cucumber mixture and burgers.
