Thai-Sweet Basil Stir-Fry

Ingredients

  • ¾ cup chopped onion
  • ½ red bell pepper, thinly sliced
  • 2 cloves garlic, chopped
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg frozen veggie crumbles
  • 1½ tsp honey
  • ¾ tsp fish sauce
  • ¼ cup fresh basil leaves
  • ½ tsp lime zest
  • 1 Tbsp lime juice
  • ⅛ tsp crushed red pepper
  • ¾ cup shredded carrots
  • ½ lime, cut into 3 wedges

Instructions

  1. Cook onion, bell pepper, and garlic in hot oil in a large skillet over medium-high heat 6 minutes or until tender, stirring occasionally. Add crumbles; cook 10 minutes or until thoroughly heated.
  2. Stir in honey and fish sauce; cook 1 minute. Remove from heat; stir in basil, lime zest, lime juice, and red pepper. Serve with carrots and lime wedges.

  • 1 (12-oz) pkg broccoli florets
  • ¼ cup slivered almonds
  • 1 clove garlic, minced
  • ½ tsp minced fresh ginger
  • 1 Tbsp sesame oil
  • ⅛ tsp salt
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Pulse broccoli in a food processor until coarsely chopped. Cook nuts, garlic, and ginger in hot oil in a large skillet over medium-high heat 1 minute or until fragrant.
  2. Add broccoli, salt, and red pepper; cook 5 to 7 minutes or until broccoli is tender.
