Chicken Enchilada Pizzas
Mixed Greens with Tangy Lime Dressing
Ingredients
- ½ onion, sliced
- ½ green bell pepper, sliced
- 1½ tsp olive oil
- ⅓ cup red enchilada sauce
- ½ chipotle pepper in adobo sauce, chopped
- 1 (6-oz) frozen cauliflower pizza crust (see Note)
- ¾ cup shredded rotisserie chicken
- ¾ cup shredded Monterey Jack cheese
- ½ avocado, chopped
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F. Cook onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender; slightly cool. Mix together enchilada sauce and chipotle pepper in a small bowl.
- Place crust on a baking sheet; spread with enchilada sauce mixture, and top with bell pepper mixture, chicken, and cheese. Bake 10 to 15 minutes or until crust is golden and cheese is melted.
- Cool 5 minutes before cutting into wedges. Top with avocados and cilantro.
Side Dish Ingredients
- 2 Tbsp sour cream
- 1 Tbsp olive-oil mayonnaise
- ½ tsp lime zest
- 2 Tbsp lime juice
- ¼ tsp pepper
- ⅛ tsp salt
- 1 (5-oz) pkg mixed baby greens
Side Dish Instructions
- Whisk together sour cream, mayonnaise, lime zest, lime juice, pepper, and salt in a large bowl. Add greens; toss.
