Ingredients
- ½ (12-oz) pkg cauliflower crumbles
- ½ (13-oz) pkg andouille smoked sausage, sliced
- 1 red bell pepper, chopped
- ½ cup chopped onion
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 cup diced rotisserie chicken
- ½ (14.5-oz) can diced tomatoes
- ¾ cup kidney beans, drained and rinsed
- ¾ tsp gluten-free Creole seasoning
Instructions
- Steam cauliflower according to package directions.
- Meanwhile, cook sausage, bell pepper, onion, and garlic in hot oil in a Dutch oven 5 minutes or until tender.
- Stir in chicken, tomatoes, beans, and seasoning; reduce heat, and simmer 5 minutes. Stir in cauliflower.
