Smoked Gouda-Stuffed Burgers

Ingredients

  • 1½ oz smoked Gouda cheese, cut into 2 equal pieces
  • 2 (5.4-oz) ground beef patties
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ red onion, sliced
  • 1 Tbsp Dijon mustard
  • 2 hamburger buns (preferably whole wheat)
  • 1 cup organic baby spinach

Instructions

  1. Preheat grill to medium-high heat. Press 1 piece of cheese in center of each patty, covering cheese with meat to seal. Sprinkle burgers with salt and pepper.
  2. Grill 5 to 6 minutes per side or until no longer pink. Grill onion slices 1 to 2 minutes per side.
  3. Spread mustard on buns; serve burgers on buns with onion and spinach.

Side Dish Ingredients

  • 1 organic sweet potato, peeled and cut into ½-inch sticks
  • ½ Tbsp olive oil
  • ⅛ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potato, oil, salt, and pepper on a rimmed baking sheet; arrange in a single layer.
  2. Bake 20 to 25 minutes or until browned and tender.
