Oven-Baked Shrimp Scampi
Spaghetti and Herbed AsparagusIngredients
- ½ lemon
- ¾ lb peeled and deveined, large raw shrimp
- 1 clove garlic, minced
- 2 Tbsp butter, melted and divided
- 2 tsp white wine (or use low-sodium chicken broth)
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 Tbsp panko breadcrumbs
- 2 Tbsp freshly grated Parmesan cheese
- 2 Tbsp chopped fresh parsley, divided
Instructions
- Preheat oven to 425°F. Grate zest and squeeze juice from lemon to measure ¾ tsp zest and 2 tsp juice.
- Combine lemon juice, shrimp, garlic, 1 Tbsp melted butter, wine, salt, and pepper in a bowl, tossing to coat shrimp.
- Combine panko, 1 Tbsp butter, cheese, 1 Tbsp parsley, and lemon zest in a second bowl. Dredge shrimp in panko mixture, pressing gently to adhere. Place on a greased wire rack on a rimmed baking sheet.
- Bake 8 to 10 minutes or until shrimp turn pink. Remove from oven.
- Increase oven temperature to broil. Broil shrimp 2 minutes or until lightly browned. Sprinkle with 1 Tbsp parsley.

- ½ lb asparagus, trimmed
- 2 tsp olive oil
- ½ tsp Italian seasoning
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Cook pasta according to package directions.
- Meanwhile, toss together asparagus, oil, seasoning, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 10 to 15 minutes or until crisp-tender.
