Cashew Chicken

Ingredients
- 4 cups broccoli florets
- 2 Tbsp sesame oil, divided
- ¾ tsp pepper, divided
- ½ tsp salt, divided
- ¼ cup toasted sesame seeds
- ½ cup cashews
- 1½ lb boneless, skinless chicken breasts, cubed
- 6 cloves garlic, minced
- 2 Tbsp vegetable oil
- ½ cup hoisin sauce
- 3 Tbsp low-sodium soy sauce
- 3 green onions, sliced
- 2 (8.8-oz) pouches microwavable brown rice
Instructions
- Preheat oven to 450°F. Toss broccoli with 1 Tbsp sesame oil and ¼ tsp each pepper and salt on a large rimmed baking sheet; spread in a single layer.
- Roast 10 to 15 minutes or until browned. Sprinkle with sesame seeds.
- Meanwhile, toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until fragrant.
- Sprinkle chicken with ¼ tsp pepper. Cook chicken and garlic in hot vegetable oil in same skillet over medium-high heat 6 minutes or until browned.
- Add hoisin, soy sauce, and 1 Tbsp sesame oil to skillet, tossing to coat chicken. Cook until sauce is thoroughly heated and chicken is done. Sprinkle with onions and nuts.
- Cook rice according to package directions. Season with ¼ tsp each salt and pepper.
