Ingredients

  • 4 cups broccoli florets
  • 2 Tbsp sesame oil, divided
  • ¾ tsp pepper, divided
  • ½ tsp salt, divided
  • ¼ cup toasted sesame seeds
  • ½ cup cashews
  • 1½ lb boneless, skinless chicken breasts, cubed
  • 6 cloves garlic, minced
  • 2 Tbsp vegetable oil
  • ½ cup hoisin sauce
  • 3 Tbsp low-sodium soy sauce
  • 3 green onions, sliced
  • 2 (8.8-oz) pouches microwavable brown rice

Instructions

  1. Preheat oven to 450°F. Toss broccoli with 1 Tbsp sesame oil and ¼ tsp each pepper and salt on a large rimmed baking sheet; spread in a single layer.
  2. Roast 10 to 15 minutes or until browned. Sprinkle with sesame seeds.
  3. Meanwhile, toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until fragrant.
  4. Sprinkle chicken with ¼ tsp pepper. Cook chicken and garlic in hot vegetable oil in same skillet over medium-high heat 6 minutes or until browned.
  5. Add hoisin, soy sauce, and 1 Tbsp sesame oil to skillet, tossing to coat chicken. Cook until sauce is thoroughly heated and chicken is done. Sprinkle with onions and nuts.
  6. Cook rice according to package directions. Season with ¼ tsp each salt and pepper.
