Slow Cooker Brown Sugar Pork Roast
Egg Noodles with Red Peppers
Ingredients
- 1½ lb boneless lean pork loin roast
- ½ tsp salt
- ½ tsp pepper
- 1 tsp olive oil
- ¼ cup yellow mustard
- 1 Tbsp brown sugar
- ¼ tsp garlic powder
- 1 cup chopped red onion
- ½ cup low-sodium chicken broth
Instructions
- Sprinkle pork with salt and pepper.
- Cook pork in hot oil in a large nonstick skillet over medium-high heat 4 minutes or until browned on all sides, turning occasionally.
- Transfer pork to a 3- or 4-quart slow cooker.
- Combine mustard, brown sugar, and garlic powder; spread mixture over pork. Add onion and broth to cooker.
- Cover and cook on LOW 7 to 8 hours or until pork is very tender. Shred or slice pork.
- Divide among 6 servings. Serve 2 portions, and reserve remaining for a later use.

- 3 oz yolk-free egg noodles
- 1 red bell pepper, thinly sliced
- 1 Tbsp extra virgin olive oil
- ¼ tsp salt
- Pinch of crushed red pepper
Side Dish Instructions
- Cook noodles according to package directions, adding bell pepper the last 2 minutes of cooking time; drain and toss with remaining ingredients.
