Slow Cooker Brown Sugar Pork Roast

Ingredients

  • 1½ lb boneless lean pork loin roast
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp olive oil
  • ¼ cup yellow mustard
  • 1 Tbsp brown sugar
  • ¼ tsp garlic powder
  • 1 cup chopped red onion
  • ½ cup low-sodium chicken broth

Instructions

  1. Sprinkle pork with salt and pepper.
  2. Cook pork in hot oil in a large nonstick skillet over medium-high heat 4 minutes or until browned on all sides, turning occasionally.
  3. Transfer pork to a 3- or 4-quart slow cooker.
  4. Combine mustard, brown sugar, and garlic powder; spread mixture over pork. Add onion and broth to cooker.
  5. Cover and cook on LOW 7 to 8 hours or until pork is very tender. Shred or slice pork.
  6. Divide among 6 servings. Serve 2 portions, and reserve remaining for a later use.

  • 3 oz yolk-free egg noodles
  • 1 red bell pepper, thinly sliced
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp salt
  • Pinch of crushed red pepper

Side Dish Instructions

  1. Cook noodles according to package directions, adding bell pepper the last 2 minutes of cooking time; drain and toss with remaining ingredients.
